“I chose snapper as the main ingredient because snapper is a most prized fish. Snapper live in a wide range of habitats within New Zealand oceans; particularly in warmer coastal waters around the North Island and the top of the South. Snapper has tender white-to-pinkish flesh with a sweet, mild flavour.” – Executive Chef, Daniel Na
